Heat oil in frying pan over medium heat.
Add kale, carrots, and spring onions. Cook, stirring occasionally, until vegetables are crisp tender (6 to 8 minutes).

Heat SEEDS OF CHANGE® Organic Wholegrain Rice & Quinoa with a Hint of Garlic according to package directions.
Place warm rice on plate and surround with vegetables in sauce, bean sprouts, shredded carrots, and courgette noodles.
